    The South is known for many things, but health food is not one of them. Stacey Schlaman, a long time resident of Madison, Alabama, is starting to change that.
    It all started back in 2010, when her then seven year old daughter was diagnosed with multiple autoimmune issues ranging from epilepsy, to Hashimoto’s disease, to severe psoriasis. In her search to avoid a lifetime of strong pharmaceuticals, she came across a revolutionary diet that was being promoted by a single physician, all the way across the country at the Seattle Children’s Hospital – the Specific Carbohydrate Diet (SCD).
    This rapidly growing diet is now offered as an alternative treatment by many doctors for multiple autoimmune issues, particularly Crohn’s, Colitis, and other gastro-intestinal problems.
    The problem is, that the diet requires strict adherence to ingredient lists, which consists mostly of fresh fruit and vegetables, and unprocessed meat, eggs, and nuts. There were virtually no commercial options to purchase “pre-made” food, until Stacey one day got a feeling.
    She was driving along the countryside near her home in late 2014 and noticed that one of the small, rural churches, sitting directly across from a cotton field, was for sale. She got a feeling, then an idea, then incredible inspiration—from something divine, or otherwise.
    She transformed the Church into what is now the first all SCD commercial bakery in the United States— Liberated Specialty Foods.
    This woman powered, and woman owned bakery’s products, which are largely nut flour based, are now sold in over 200 grocery and health food stores (including Whole Foods, Earth Fare, and Nugget Markets) from Manhattan, to downtown San Francisco, and the list is growing all the time.
